The essence of the process
On the roughly half-hectare cordon-trained vineyard, grapes are grown with strict yield control. Trunk cleaning and shoot selection are carried out personally, with attention given to each of the 1,465 vines.
Harvest usually takes place at the end of September or in early October. Selected bunches are destemmed and crushed with stainless steel equipment, then, depending on the variety, receive short skin contact before manual pressing.
Fermentation is driven by wild yeasts naturally present in the environment. It is a greater risk, but we believe that fewer artificial interventions create wines with true personality.
For all wine types, the main technology is reductive, stainless-steel tank vinification. Barrel-aged or oxidative lots are made only in exceptional vintages and in very small quantities.

A later, careful harvest with selected bunches and the help of family and friends.
Pressing
Stainless-steel destemming and crushing, variety-specific skin contact and manual pressing.
Fermentation

Primarily stainless-steel reductive technology; barrel use only in special vintages.

Less intervention, more character
Technology is not the goal. Its role is to keep the character of the Felsőörs site, the vintage and the grape clearly present in the wine.
