Good wine begins in the vineyard

Site, variety, rootstock, pruning, plant protection, canopy condition and crop level can all influence the final quality of wine. In difficult vintages, drought, hail or fungal pressure make timely decisions even more important.

The role of advice is not to provide one universal recipe but to assess a specific situation, consider possible interventions and understand the consequences of each choice.

In the cellar, small decisions accumulate

Processing speed, pressing, fermentation temperature, yeast strategy or controlled spontaneous fermentation, oxygen exposure and sulphur management can all shape the developing wine.

Wine faults: earlier is usually better
